Aidell’s Pineapple and Bacon Smoked Chicken Sausage with Wildbrine Raw Organic Saurkraut

A lot of bratwursts and hot dogs I don’t eat often, but Aidell’s Sausages are a healthier option that is way better than the other kinds anyway.  The pineapple and bacon flavor is soo tasty. If I get the chance to cook one over the fire on a cool fall evening, life is good.

I love to pair my Pineapple and Bacon Smoked Chicken Sausage with saurkraut to give my immune system and gut a boost. Did you know that saurkraut is wildly good for you?  I’ve heard of a mom who requires each member of her family to eat a serving of saurkraut every day because of it’s health benefits. While my family currently doesn’t eat saurkraut every day, I do watch for opportunities to add it to our diets, like with these sausages. Give me a flavorful chicken sausage piled high with saurkraut, j.dawg’s copycat sauce, and a pickle spear and I’m one happy girl.

Sukhi’s Chicken Tikka Masala with Royal Basmati Rice

This isn’t my favorite chicken tikka masala, but it is an easy, yummy food option I buy almost every Costco run.  To have my absolute favorite version of the dish you’ll need to stop over at a hole-in-the-wall restaurant in Logan, Utah called Tandoori Oven.  Theirs is so good they were featured on the tv show Diners, Drive-ins, and Dives! It is one of my favorite foods.

This Tikka Masala; though, is a nice heat and eat option.  It’s a relief to have in the fridge when looking for something quick but also healthy and tasty. Basmati Rice is our pick for pairing with Indian foods because it has a slightly nutty flavor and great texture.  When cooked well (we like to cook rice in the instant pot–for best results rinse multiple times before cooking), it is fluffy and sticks together slightly in small clumps.  Heaven.

For an added bonus, throw in some Stonefire Original Mini Naan!

Snapdragon Vietnamese Pho Bowls with Kevin’s Roasted Garlic Chicken

The noodles are nice, and the broth of these Vietnamese Pho Bowls is yummy, but without any additions this dish is basically a new flavor of cup-o-ramen.  For us that didn’t quite cut it no matter how good the flavoring oil is. My thought when looking to add a food item to a meal is ‘How do I pump up the protein?’ Kevin’s Roasted Garlic Chicken is a great answer. For an easy lunch to take to work–or fast dinner–we like to pair the pho bowls with the chicken.  A quick pan fry and your chicken is ready to go.  It has delicious flavor and the size of the chicken pieces is perfect for adding to a variety of foods.  We like any of the Kevin’s flavored meats and stock up our fridge with them anytime we shop at Costco!  I’ve used this chicken to make dinner prep easier in dishes like enchiladas and chicken pot pie. Easy, tasty protein is always in order!

Rana Tagliatelle Seasoned White Chicken & Mushroom Sauce with Pura Vida Fire Roasted Vegetable Melange

This is one of my favorite Costco combinations to date.  I would easily spend $30 at a restaurant for a one-person serving of this exact pasta dish. We bought the Tagliatelle recently to try.  When I opened it I thought, ‘Oh yeah, it won’t have all the good stuff the picture shows.’ The package contained noodles, chicken, and a super yummy mushroom sauce, but no actual mushrooms or vegetables.  I realized I could easily add my own vegetables as I had also bought a frozen fire roasted vegetable pack to try!  I added a layer to the noodles before pouring the sauce on and popping the dish in the microwave. I increased the recommended cook time by a few minutes to compensate for adding the frozen veggies. It turned out so good.  We enjoyed this meal at the end of the day after running here there and everywhere and it did not disappoint. My husband and I both ate a serving and had about half of the dish leftover. This will be one of our go-to meals every Costco run from now on.

Quaker, Oats Old Fashioned Oatmeal with Kirkland Signature 3 Berry Blend

I love oatmeal and eat it regularly because it is low in calorie density.  I am going to give you my signature oatmeal recipe that will change your life. It’s a bold claim to make, but I’m here to prove that there needs to be no more boring mushy oatmeal for you!

Jessica’s Oatmeal Recipe:

2 overripe medium bananas, mashed

3 cups frozen fruit of choice (mixed berries is tasty, I also love throwing in some tropical fruits sometimes)

2 cups Quaker Old Fashioned Oats

1 Tbsp Pure Maple Syrup (I use Kirkland Signature)

2 Tbsp Nut butter of choice

1 packet of SweetLeaf Stevia (no other brand will do. Sweetleaf is the best)

1/2 Tbsp of Ground Cinnamon

Salt to taste

Enough water to cover

Combine everything into a medium saucepan and cook until desired consistency!  It is sweet, full of flavor and vitamins, and delicious!  Pair with a couple of eggs for a balanced breakfast (or lunch, or dinner–It’s a great option anytime).
